BEST Frito Pie

2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds ground turkey
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/2 cup tomato paste
2 cups beef stock
2 cups canned dark red kidney beans
1 1/2 tablespoons all-purpose flour
1 cup chopped cilantro

Cook onions in oil, add meat and season with chili powder, cumin, red pepper, oregano, garlic, salt & pepper. Cook meat until well browned and thoroughly cooked through. Add tomatoes and tomato paste and allow to cook about 5 minutes. Pour in beef stock and drained beans and bring to a simmer. Scoop out some of the hot liquid in a small bowl and whisk in the flour. Once flour has dissolved completely in liquid, pour flour mixture into the meat mixture and stir well. Allow to simmer for at least one hour. Stir in cilantro before serving. Scoop meat over corn chips/fritos and top with cheese.
