Santorini Special


Olive Oil cooking spray
1/2 C Onion, chopped
1/4 C shredded carrots
1/4 C Cherry tomatoes, halved
1 T Garlic, chopped
1 1/2 C Rice
3 1/4 C Chicken broth
2 T Capers and/or kalamata olives
2 T Greek seasoning
Salt & pepper
4-5 Tilapia fillets (depending on size)
1 Lemon, sliced thin
1/4 C Feta cheese, crumbled

In a large skillet over medium heat, spray with olive oil cooking spray. Add onion and carrots; cook for 1 to 2 minutes or until softened.Add garlic and tomatoes and season with salt allow to cook for another minute. Add rice and cook for another five minutes or until rice is golden brown, stir in capers and/or olives. Increase heat to high; add broth and 1/2 tsp pepper and Greek seasoning. Bring to a boil and reduce heat. Simmer, covered, for another 5 minutes.

Season tilapia with Greek seasoning and salt place fish in skillet on top of the rice, and place sliced lemons on each piece of fish. Cover and simmer another 12-15 minutes or until the fish is opaque. Remove from heat, sprinkle with feta and serve.
