JuJu's Most Excellent Pasta

Extra Virgin Olive Oil
1 shallot sliced thin
2 tsp garlic, minced
1 C sliced mushrooms
1/4 C Pesto
1/4 C Red Wine
1 Can Red Clam sauce (find near the pasta sauces)
1/4 C Sun Dried Tomatoes cut into small pieces
1/2 C Parmesan Cheese
Angel Hair Pasta


Heat a sauce pan and add a splash of EVOO to the bottom of the pan. Saute shallot, and garlic and stir 3-5 minutes on medium heat. Add mushrooms and salt veggies. Continue to cook 3-5 more minutes. Add pesto and continue to cook 3 minutes. Stir in wine and scrape bits from the bottom of the pan. Allow to reduce for two minutes, stir in Red Clam sauce. Add sun dried tomatoes and let simmer on low for 15 - 20 minutes, stirring occasionally.

Boil water for pasta and salt generously. Cook angel hair pasta, drain and toss in red clam sauce and Parmesan cheese.


*Serve with a green salad and garlic bread.
