JuJu's Bruschetta, aka: Afternoon Delight!


French Bread cut into 1" thick slices
Cherry tomatoes, quartered
Capers
Extra Virgin Olive Oil, the best you have
Balsamic Vinegar, the best you have
Salt and Pepper
Garlic powder
Fresh basil

Brush bread with oil and sprinkle with salt and garlic powder. Heat a non-stick skillet over medium high heat. Cook bread on skillet oil side down. Brush back of bread with oil and sprinkle with salt and garlic powder. Cook until browned and flip. Meanwhile, in a small bowl toss quartered tomatoes, capers, drizzle oil, vinegar, salt, and pepper. Spoon tomato mixture onto toasted bread and cut thin ribbons of basil over the top.
